Answer:
1. Not recommended.. IBL is good for Photons and Final Gather.. (Fur would not render optimally in these conditions). Best bet for MR Fur is using direct lighting using the MR rasterizer and detail shadow maps.
2. Yes.. Render everything Lambert white including the fur.. Everything else will be shadows. Use this layer as a multiplier or darken layer in your comp.
